3 Easy Breakfasts For The Morning Hustle

I will be the first to admit that breakfast in my house is usually sugar filled and i could classify it under the title "crap". Both my husband and I made a conscious decision that what we feed the kids in the morning needs to change. Dont get me wrong we still toss in the occasional waffle with the fake no name syrup as well as sugar coated cereal but here are our 3 go tos that make us feel a bit better about what we are starting our day off with

1. Healthy Whole Wheat Banana Pancakes

These delicious whole wheat sugar free pancakes are a huge hit in our house. They keep well in the freezer so we usually make a giant batch and then pull a few out for the mornings when we dont have much time

2 Bananas

1 Cup Whole Wheat Flour

1 Cup Almond Milk

1 Egg

1 tsp cinnamon

1 tsp vanilla extract

1 tsp baking powder

pinch of salt


mix well and fry in a pan with coconut oil.

2. Monster Smoothie ( or any other creative fun name you want to give it)

Smoothies are a great way to add in a bunch of nutrients to a delicious easy beverage. we tend to make ours green so giving it a fun name can take the "icky" factor away from the kids. Mix and match any of the ingredients below

half a banana

half cup frozen mixed berry fruit

1/4 cup frozen cubed avocado

almond milk

handful of spinach

1/4 cup water

1tsp of chia seeds

cocoa powder

peanut butter

orange juice

greek yogurt

kale

3. Apple Cinnamon Oatmeal Cups

A quick and easy grab and go breakfast that is delicious and nutritious. Make ahead and have them ready to go throughout the week.

3 cups rolled oats (not instant)

1 apple peeled and cubed

2 eggs

1 tsp baking powder

2 tsp cinnamon

pinch of salt

1 cup almond milk

1/3 cup pure maple syrup

1 tsp vanilla extract


Preheat oven to 325. Spray non stick cooking spray to muffin tin. mix all ingredients well and scoop in to muffin tin. Bake for 20-25min or until golden brown
